“À Brás” Style Codfish
Ingredients
500 g of potatoes
4 tablespoons of oil
350 g of onions
5 eggs
2 garlic cloves
1 tablespoon of chopped parsley
Black olives
Salt and pepper
2 tablespoons of cream (optional)
Preparation
Nothing better than a traditional recipe. Try this recipe of “À Brás” Style Codfish with the Riberalves codfish, ready to cook!
Separate the cod into strands. Peel the potatoes, wash them, and cut them into straws with the help of a grater. Then wash them in several waters, drain and dry them on a cloth. Peel and chop the garlic cloves and slice the fat very finely. Heat the olive oil in a frying pan and add the garlic cloves. As soon as the garlic starts to brown, immediately add the potatoes, and fry them lightly, always stirring with a fork to prevent them from sticking together.
Remove the potatoes and in the same fat, braise the onions. Then add the cod, wrap it well in the onions and cook for a few minutes. Reintroduce the potatoes into the pan, stir and drizzle with the beaten eggs seasoned with salt and pepper. Stir continuously over medium heat so that the eggs are soft. (Sometimes I cheat and add a couple of spoonsfuls of cream to make the sauce moister…) Sprinkle with chopped parsley and garnish with black olives.
