Place the codfish in a covered pan, cover with boiling water, cover and wait 15 to 20 minutes. Next, remove the skins and bones, turning the fillets into small flakes. Put them in a deep pan and cover them with hot milk and bay leaves, leaving them to infuse for at least 1 hour.
Pre-boil the potatoes and cut them into centimetre-thick slices. Put the olive oil, the garlic and the sliced onions in an oven dish. As soon as the onion is browned, add the potatoes and the codfish flakes. Season with salt and pepper. Add the sliced hard-boiled eggs. Place the dish in the oven and let everything boil for 10 to 15 minutes.
Before serving the almost Gomes de Sá style codfish, be a little naughty: add a cup of black olives, sliced, two tablespoons of capers and a generous dose of chopped fresh chives.
