Bacalhoada

Ingredients

2 codfish loins
3 potatoes, cut into wedges
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
200 g cherry tomatoes
1 onion, quartered
1 head garlic
150 g green olives
200 ml olive oil
3 bay leaves
Salt to taste
Black pepper to taste

Preparation

Have you ever tried to make a Bacalhoada? With Riberalves Codfish it’s sure to be perfect. Here’s the recipe.

Preheat the oven to 200 ºC.

Cook the codfish loins with the bay leaves and the whole head of garlic for 9 minutes.

Use a skimmer to remove the fish from the water and then add the potatoes. Cook for about 10 minutes.

Drain the water and set the ingredients aside.

Drizzle the bottom of a large ovenproof dish with olive oil.

Cut the codfish loins in half and arrange them in the dish, leaving a space between them. Now put the potatoes, peppers, tomatoes, onions, garlic heads, olives and bay leaves in between the pieces of fish. Season with salt and pepper to taste and drizzle everything with the remaining olive oil.

Cover the dish with aluminium foil and bake in the oven for 30 minutes. Remove the aluminium foil, drizzle the codfish and vegetables with the juices, and bake for another 15 minutes.

And your delicious Bacalhoada is ready!
