Baked Codfish Quiche with Cauliflower

Ingredients

600g medium Riberalves cod fillet
200g of cauliflower
100g of leek
100g of onion
100g island cheese
40g chives
20g of garlic
250ml of cream
125ml of milk
5 egg yolks
300g shortcrust pastry
salt and black pepper q.b.
oil q.b.
butter q.b.

  1. Place the codfish on an oven tray with a drizzle of olive oil and bake at 160ºC for 20 minutes; shred and set aside.
  2. Finely chop the onion and garlic; slice the leek.
  3. In a pan add a drizzle of olive oil and sauté the onion until translucent; add the chopped garlic and leek and sauté for another 2-3 minutes.
  4. Remove from the heat; add the codfish flakes and mix them; grate the cauliflower onto the mixture and mix; adjust seasoning with salt and pepper.
  5. Grease a pie tin with butter; pour the dough into the tin and trim the excess; pour the codfish mixture into the tin and spread evenly.
  6. Separately, mix the egg yolks, cream and milk; pour over the codfish mixture; bake the Baked Codfish Quiche at 180ºC for 15 minutes; sprinkle with grated Queijo da Ilha (Madeiran cheese) and bake for another 10 minutes.
