Baked loins with roasted vegetables quinoa

Ingredients

1 pack Riberalves Cod Loins
Olive oil q.s.
1 courgette
1 red pepper
1 red onion
Salt q.s.
Thyme q.s.
250 g of quinoa

Defrost the codfish loins, rinse them under cold running water, dry them with absorbent paper and bake them in olive oil in a preheated oven at 200°C for 15 to 20 minutes.

Cut the courgette, the pepper and the onion into small cubes, place in a roasting pan with olive oil, season with salt, sprinkle with thyme, mix everything and roast for 20 to 25 minutes.

Wash and cook the quinoa in salted water. Drain and mix with the vegetables roasted in olive oil.

Serve the codfish loins with the quinoa and roasted vegetables, all sprinkled with fresh thyme.
