“Benedict Eggs” on a bed of spinach and codfish flakes

Ingredients

2 ready-to-cook Riberalves cod loins
6 eggs
2 packs of fresh baby spinach
6 cloves of garlic
oil

Preparation

Let’s prepare a recipe for “Eggs Benedict” on a bed of spinach and codfish flakes with Riberalves Codfish, Ready to Cook!

In a pan of boiling water cook the codfish loins for about 7-8 minutes. After cooked, shred and store.

Peel and chop the garlic and place in a frying pan with a drizzle of olive oil. Heat gently and add the spinach leaves, seasoning with salt. Cook the spinach leaves, without letting them soften completely.

In a small bowl break the eggs individually, without letting the egg yolk break.

Pour 250 ml of water into a pan and heat until almost boiling. Before boiling, pour the egg carefully so that it doesn’t fall apart or scatter. Allow the egg to cook for about 4 minutes. Carefully remove the egg and repeat the procedure for each egg.

At the end, on a platter lay the spinach with the codfish flakes and arrange the eggs benedict on top.
