Ingredients
250 g of potatoes
Salt and black pepper q.b.
1 small onion
1 clove of garlic
Olive oil and vinegar q.b.
1 egg
parsley q.b.
Frying oil

Preparation

Defrost the codfish and cook in plenty of water for approximately 5 to 7 minutes (depending on the size of the fish). Then, drain well, remove skin and bones and place in a dry kitchen cloth. Close and shred well until the codfish is finely shredded.
Peel the potatoes, cook in boiling salted water, drain well and blend it in a food mill. Soften the finely chopped onion and garlic in 3 tablespoons of olive oil.
In a bowl add the shredded codfish, the crushed potatoes, the onion and the garlic, mix well. Then add the egg and the chopped parsley, season lightly with salt and freshly ground black pepper and mix very well.
Make small balls with the potato and codfish dough and fry in very hot oil until golden brown, remove to a plate with absorbent paper towels and leave to dry (you can also arrange the codfish balls separate from each other in a box and freeze, then fry them still frozen).
