Braised Codfish

Ingredients

800 g of deep-frozen soaked cod slices Traditional Riberalves
1 large homemade bread
4 cloves of garlic
1.5 dl of oil
Coriander q.s.
Coarse salt and pepper q.s.

Preparation

Defrost the codfish pieces, dry them with kitchen paper and season them with pepper.

Cut the bread in half and then cut each half in half lengthways so as to open them. Cut a few slashes with a knife on the crumb part until you reach the crust, but do not cut too much so that the crumb does not separate.

Peel and wash the garlic cloves and cut them in half. Place the bread on a griddle or grill, heat, toast a little, remove when it starts to crisp and rub it with the garlic cloves. Place it on the grill with the crumb facing up, drizzle with 3 tablespoons of the olive oil, sprinkle with a little coarse salt and arrange on a platter.

Grill the codfish on both sides, remove it, discard the skin and bones, cut it into large pieces and spread them on top of the bread. Heat the remaining olive oil in a pan, drizzle over everything, sprinkle with chopped coriander and serve the Braised Codfish.

The Chef’s suggestion:

If you have the possibility, you can grill the codfish and also the bread on the coals.
