Brás Style (fried) Codfish with caramelised onions in Port wine

Ingredients

1 steak of cod
1 red onion
2 garlic cloves
500ml of port wine
Oil
salt
chili
coriander
1 big potato
1 egg yolk

Preparation

Looking for a recipe to combine Codfish with Port Wine? Take a look here: Cut the onion into half-moons and slice the garlic cloves. Sauté with a drizzle of olive oil.

Place the fillet on top of the sautéed ingredients and brown over a low heat for 10 to 15 minutes. Remove the fillet and set aside.

Increase the heat slightly and add the port wine. Leave to cook until the port wine has reduced, having a creamy mixture.

Separately, grate a peeled potato, and fry in a frying pan in a drizzle of olive oil. Shred and slice the codfish. Set aside.

When the port wine has almost completely evaporated, remove from the heat and add the shredded and flaked codfish. Add the fried potatoes and chopped coriander and mix everything together.

For serving, you can add the fried potatoes and chopped coriander. Pour a little egg yolk over everything to coat.
