Chickpea and Codfish Migas

Ingredients

4 Riberalves Ready-to-cook Traditional Codfish Steaks
200 g collard greens (“Portuguese cabbage”) finely cut
400 g cooked chickpeas
1 small loaf cornbread with chorizo
2 cloves garlic, chopped
1 small loaf cornbread
1 tablespoon olive oil
Sea salt to taste
Black pepper to taste

Cook the codfish steaks for 8 minutes.

Cook the cod in boiling water for 8 minutes. After it has cooled, flake it and set it aside.

Crush the chickpeas with a fork.

Blitz the cornbread and the dried tomatoes in a blender and season with salt.

Put the olive oil into a frying pan and gently fry the cornbread until golden brown. Remove and add some more olive oil and garlic. Remove and add the cabbage, cooking until it shrinks.

Add the chickpeas to the cabbage and stir them in. Lastly add the cornbread and mix everything together.

Put the migas on a platter and arrange the codfish on top.

Sprinkle your Chickpea and Codfish Migas with parsley and serve.
