3 l water
3 garlic cloves
2 bay leaves
1 large ripe tomato
1 tbsp. tomato puree
100 ml olive oil
1 tbsp. lard (optional)
Parsley to taste
Black pepper to taste
Salt to taste
200 g Carolino rice
Vinegar to taste

Allow the cod cheeks to defrost, rinse under cold tap water and set to the side.
. Place the water, chopped onions, chopped garlic, bay leaves, finely chopped (skinless) tomato, tomato puree, lard, codfish cheeks and 5 sprigs of coarsely chopped parsley in a large pan. Season with salt and pepper, bring to the boil and cook for 10 minutes.
. Remove the cod cheeks once cooked and add the rice. Stir and cook for approximately 15 minutes.
. In the meantime, remove the skin and bones and flake the cod cheeks. Once the rice is cooked, add the codfish flakes and cook for 1-2 minutes.
. Drizzle with a little vinegar, top with croutons and chopped parsley and serve.
