Codfish with coconut milk and fresh mango

Ingredients

500 g deep-frozen soaked codfish riberalves
1 small bottle of coconut milk
30 g of green olives
30 g of black olives
2 large onions, cut into thin rings
1 leek stalk, cut into rounds
1/2 cup chopped parsley
1/2 cup chopped coriander
4 tablespoons of olive oil
1 glass of white wine
salt
Fresh mango, sliced to taste
Chopped chives to taste
lemon juice to taste

Separate the codfish into flakes.

Drizzle the bottom of a pan with olive oil and cover with a layer of sliced onions and leeks. Make another layer with slices of codfish sprinkle with parsley and chopped coriander, plus some pitted olives, cut into slices. Drizzle with tablespoons of olive oil and coconut milk. Repeat the layers until the ­ingredients are finished.­ At the end add a glass of good white wine. Cover the pan and cook over a medium heat for 25 to 30 minutes. Adjust the salt.

Serve the Codfish with coconut milk and mango with loose white rice and sliced fresh mango, seasoned with a few drops of lemon juice and chopped chives.
