Codfish and Curry Fritters with Lime Basmati Rice

Ingredients
150 g of unleavened flour
250 ml of sparkling water
1 egg
1 small onion
1 clove of garlic
2 tablespoons of chopped parsley
1 tablespoon of curry powder
Black pepper q.s.

Defrost the codfish and cook in plenty of water for approximately 5 to 7 minutes (depending on the height of the fillets). Then drain well, remove the skin and bones and flake.
In a bowl, mix the flour, sparkling water and egg and stir until smooth. Then add the finely chopped onion, garlic and parsley, the curry, freshly ground black pepper and 1 pinch of salt.
Stir well until all the ingredients are mixed together. Next, add the codfish flakes, stir and leave to rest for 15 min.
In a non-stick frying pan, fry the codfish fritters in olive oil, pouring in small portions of batter with the help of a ladle, turning to brown on both sides.
Finally, remove to a serving dish with absorbent paper to dry.
Serve with basmati rice sprinkled with lime zest.
