Ingredients
2 large oranges (from Bahia)
2 tablespoons of olive oil
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
juice of half a lemon
1 red pepper
1 large onion
1 bunch of parsley
1 sprig of chives
50 g sliced almonds
100 g of «gruyere» cheese
watercress to taste
lemon juice to taste

Boil the codfish, clean it and separate it into slivers. With a knife, remove the segments from two oranges (cut two halves, then the peel to the core, leaving the orange whole, and, with a very sharp knife, cut out small segments from between the skin partitions).
Separately make a “vinaigrette” with the olive oil, the juice of a lemon, a spoonful of Dijon mustard and a tablespoonful of balsamic vinegar. Mix the chips, the diced cheese, the orange segments, the onion, and the chopped parsley, the cleaned and very finely diced red pepper, season with the vinaigrette and top with the toasted sliced starches and the chopped chives.
Serve the Codfish and Orange Salad on a bed of well-washed watercress seasoned with a few drops of lemon.
