Codfish and vegetable casserole

1 garlic clove
1 large ripe tomato
1 bay leaf
1 small butternut squash
1 large sweet potato
Salt and black pepper to taste
100 ml white wine
1 small red pepper
200 g peas
Today’s recipe idea is Codfish and Vegetable Casserole. Shall we make it?
Allow the codfish to defrost, rinse it under cold tap water and set to the side.
Cook the chopped garlic and onion in olive oil until soft, add the chopped (skinless) tomato and bay leaf and cook for 2-3 minutes. Add the peeled, diced pumpkin and sweet potato, season with salt and black pepper and cook for 2-3 minutes.
Add the wine and bring to the boil for 1-2 minutes. Add the diced pepper and (defrosted) peas. Cover the pan and cook for a further 5 minutes. Stir in the codfish and 100 ml hot water. Cover the pan and cook on low to medium heat for 8-10 minutes.
Sprinkle with parsley and serve immediately. Your Codfish and Vegetable Casserole is ready!
