Codfish Benedict

A delicious and well-known recipe that unites two fantastic elements: succulent codfish flakes and eggs benedict. Check out the recipe!

Ingredients

1 Riberalves cod loin
2 gems
1 tablespoon of water
1 tablespoon of lemon juice
120g butter
black pepper q.b.
2 eggs
sea salt q.b.
white vinegar
Smoked paprika q.b.
chives q.b

Preparation

To prepare a delicious codfish Benedict, prepare the Riberalves codfish!

Bring the water to the boil and add the codfish loins. Cook for 4 minutes.

Leave to cool and flake it.

In a heatproof bowl place the egg yolks, water and lemon juice. Stir until bubbles form. Cook in a bain-marie, stirring constantly until thickened, add the butter little by little stirring constantly.

Remove from the bain-marie and season with pepper. Divide in 2 and toast the bread.

Poach the egg in salted water with vinegar.

Place the codfish on the bread slices and sprinkle with the smoked paprika, then place the egg and cover with the sauce, sprinkle the codfish Benedict with chives.
