Codfish Bread

Ingredients

800 g deep-frozen soaked cod fillets Riberalves
300 g of flour
5 eggs
1.5 dl of olive oil
1.5 dl of milk
1 tablespoon of baking powder
1 sprig of chopped parsley
Salt and pepper q.b.
margarine to grease

Preparation

Let the codfish fillets defrost, then rinse them under cold water, pour them into a pan, add cold water until well covered, bring to the boil and turn off the heat. Let the codfish cool in the water, then drain it, remove the skin and bones and shred it very finely, as if it were for pastry.

Turn on the oven to 180 ºC and grease a cake tin with margarine. Pour the flour into a bowl, add the yeast, season with a pinch of salt and mix. Add the eggs, milk and olive oil, season with a pinch of pepper and mix well. Add the codfish and the chopped parsley and mix well.

Pour the mixture into the mould and bake in the oven for 30 minutes. Check the baking time with a toothpick, remove from the tin, allow to cool slightly and serve the Codfish Bread decorated to taste.

Chef’s Note:

If you find that there is too much codfish, remove some and use it in another recipe.
