Ingredients
1 Riberalves Ready-to-Cook Codfish Steak, cooked
300 g boiled sweet potato
2 eggs + 1 yolk
Oat flour for dredging
1 onion
Handful of fresh parsley
2 tablespoons extra virgin olive oil
Pinch of black pepper and nutmeg

Shred the cod. Sauté the onions in olive oil in a frying pan.
Mash the sweet potatoes and season with pepper and nutmeg to taste.
Add the eggs, onion, cod and potato, and blend until you have a smooth even mixture. Add the finely chopped parsley.
Make small balls with your hands. Dredge with the oat flour.
Bake the codfish cakes in a preheated oven at 200 ºC until golden brown.
