Defrost the codfish fillets and cook them in water with peppercorns and a bay leaf. Then drain the codfish, let it cool down, remove the skin and bones and flake it.
Clean and wash the broccoli, cut it into sprigs, cook it in salted water, leaving it “al dente” and drain it. Peel and wash the carrots, cut them into sticks and cook them in salted water, leaving them “al dente”.
Wash the courgettes, remove the ends and cut them into sticks. Arrange the mushrooms and slice them. Peel and wash the onion and garlic cloves, cut the onions into half-moons and chop the garlic. Heat the olive oil in a frying pan, add the onion and garlic and sauté until the onion is soft. Add the courgette and the mushrooms and sauté a little longer.
Add the carrot and the broccoli, let it sauté very well, add the codfish and the soy sauce, stir it in and let it cook for another 2 or 3 minutes. Adjust the seasoning, remove from the heat and serve sprinkled with sesame seeds.
