Codfish Crumble

Ingredients
700 g cornbread
1 onion
2 garlic cloves
1 bay leaf
300 ml cream
50 g Parmesan cheese
30 ml olive oil
50 g pitted olives
Parsley to taste
Salt and pepper to taste

Peel and slice the garlic and onion. Add them to a frying pan, together with the olive oil and bay leaf. Fry gently on low heat.
Stir in the codfish and cream and continue cooking. Season with salt and pepper. Add the chopped parsley and olives. Cut the crusts off the cornbread and whizz it in a food processor. Stir the crumbled cornbread into the codfish mixture.
Place the mixture on a baking tray and sprinkle with grated Parmesan. Bake at 180°C in a pre-heated oven for 15 minutes. Remove from the oven and serve.
