1 tablespoon of oil
1 tablespoon of coconut oil
2 garlic cloves
1 green apple
1 level tablespoon of curry powder
200 ml of coconut milk
Black pepper q.s.
1 sprig of coriander
To prepare a delicious Codfish Curry, start by defrosting the shredded codfish.
Rinse under cold running water and drain well.
Soften the finely chopped onion and garlic in olive oil and coconut oil. Then add the peeled and grated apple and cook for 2 minutes.
Next, add the curry powder and sauté for 2 minutes, stirring. Add the coconut milk, season lightly with salt and freshly ground black pepper and simmer for another 2-3 minutes.
Finally, add the drained shredded codfish, stir and cook for 4 to 5 minutes.
Sprinkle with chopped fresh coriander and serve with cooked basmati rice with sultanas and toasted almonds.
