Codfish Flan with almonds

Ingredients

500 g deep-frozen soaked codfish Riberalves
1 tablespoon of butter
butter to grease
1 large chopped onion
3 minced garlic cloves
2 tablespoons (full) whole wheat flour
1 cup of milk
2 eggs
1 tablespoon chopped chives
100 g toasted almond slices

Preparation

Have you ever tried preparing a codfish flan with almonds? Here’s the full recipe!

After cooked and cleaned, put the codfish through a food processor until it is well ground. Set aside.

Grease an 18 cm baking pan (with a hole in the middle) with good butter. In a medium pan, melt the butter over medium heat, sauté the onion and garlic until soft, add the flour and stir until it starts to brown.

Mix in the milk and eggs, which you add without stopping stirring, and let it thicken. Add the codfish and the chopped onion. Separately, toast the almond slices over a very hot heat. Add them carefully to the mixture and pour it into the mould.

Bake in the oven (at 200 ºC) for about 30 minutes until golden brown. Remove from the tin, let it cool and serve with a good green salad. Your codfish flan is ready!
