Codfish Fry

How about a Codfish Fry made with Riberalves Codfish Stew? See here the complete recipe and bon appétit

Ingredients

800 g deep-frozen soaked cod fish stew Riberalves
800 g of potatoes
1 courgette
2 onions
1 small can of chopped tomato
0.5 dl of olive oil
1 vegetable bouillon cube
1 bay leaf
1 bunch of coriander
Salt and pepper q.b.

Preparation

Defrost the codfish stew and set aside. Heat a pan with 6 dl of water and the vegetable stock and boil until dissolved. Peel the potatoes, cut them into slice and rinse them. Wash the courgette, remove the ends and grate it.

Peel the onions and the garlic cloves, chop them finely, place them in a large frying pan, add the olive oil and the bay leaf, heat and fry until golden brown.

Then add the tomatoes and cook for a little longer.

Add the codfish and the potatoes and place the courgette on top.

Add the vegetable stock and cook, adding more water if necessary, until the potatoes are soft. Adjust the seasoning, remove from the heat and serve sprinkled with chopped coriander.

Expert suggestion: If you like, you can add in the Codfish Fry about 200 g of prawns to the Codfish Fry.
