Codfish Lagarada


How about preparing a Codfish Lagarada? A simple and very tasty recipe with the best Protein, Codfish, Ready to Taste Good!


800 g deep-frozen soaked cod loins Riberalves
1/2 small bread
600 g of small potatoes
4 cloves of garlic
2 dl of olive oil
2 bay leaves
Olives q.s.
Coriander q.s.
Salt and pepper q.b.


How about preparing a Codfish Lagarada? A simple and very tasty recipe with Riberalves codfish, ready to cook!

Defrost and dry the codfish loins very well, season them with pepper and set them aside.

Wash the potatoes in their skins, place them on a baking tray, sprinkle them with coarse salt and bake them in a preheated oven at 180 ºC, stirring them occasionally, for approximately 45 minutes or until baked.

Place the codfish loins on another tray. Peel and wash the garlic cloves, crush them, spread them over the codfish, drizzle with olive oil, add the bay leaves and bake in the oven for 40 minutes, drizzling occasionally with the olive oil from the tray.

Remove the codfish loins from the oven and place them on a platter. Also remove the potatoes, shake off the excess salt, press them to open them a little and add them to the codfish. Also add the sliced cornbread, drizzle with the olive oil from roasting the codfish, garnish with black olives and chopped coriander and serve the Codfish Lagarada.

The Chef’s suggestion:

You can add a halved head of garlic to the codfish tray. It adds flavour and serves as a decoration.
