Codfish Loin with Chili
2 garlic cloves
1 green pepper
1 red pepper
1 Ox Heart Tomato
2 tablespoons Tomato pulp
200 ml of white wine
1 teaspoon cumin
1 teaspoon cayenne pepper
1 teaspoon paprika
150g red beans
To prepare a delicious recipe with codfish fillet with Chili, start by sautéing the onion with the garlic cloves.
Let it brown a little, add the tomato, the peppers and the chillies cut into small cubes.
Add the cumin, paprika and cayenne pepper. On a very high heat, add the white wine.
Let it evaporate a little, reduce the heat and add the tomato pulp.
Then add the cooked red beans.
Allow to cook a little longer and adjust the salt and sugar if necessary.
The codfish loin must be cooked separately in boiling water. Place the fillet, about 8 to 10 min over low heat, after it has come to the boil.
Serve in a deep plate, with the chilli on the bottom and the loin in the centre. You can finish with chopped coriander to taste.
