Ingredients

4 deep-frozen soaked cod fillets Riberalves
1 large bunch of coriander
2 onions
2 garlic cloves
1 tablespoon of flour
1 tablespoon of butter
1 l of milk
1 bay leaf
1 bunch of celery leaves
4 tablespoons of olive oil
1 glass of white wine

Cook the codfish loins in milk with a bay leaf and a sprig of celery. Once cooked, drain and set aside.

Soften the garlic in olive oil, add the chopped onions and let them soften too. Add a large bunch of coriander, a glass of white wine and as soon as they soften, remove, allow to cool and place in a blender.

Melt the butter on the heat, add the flour, some milk from the codfish cooking, and add the coriander mixture. Let it reduce. As soon as the sauce is velvety, add the loins and let them warm up.

Serve the Codfish Loins with Coriander Sauce with a small portion of fettuccine cooked in water and salt, sautéed with a knob of butter.
