Ingredients
Olive oil to taste
Thyme to taste
400 g baby potatoes
2 carrots
Salt and black pepper to taste
400 g Brussels sprouts
1 onion
1 dessertspoon paprika
100 ml white wine
150 ml port wine
50 ml balsamic vinegar
2 tablespoons honey
2 pods star anise (optional)
1 cinnamon stick
2 tablespoons butter
3 tablespoons sultanas

Thaw the codfish loins, rinse them under cold running water, dry them well with kitchen paper and put them in a large ovenproof dish greased with olive oil.
Sprinkle with thyme, drizzle with olive oil and bake in a preheated oven at 180 °C for 25 minutes.
Cut the potatoes in half, peel the carrots and cut them into pieces and boil them in salted water for five minutes.
Drain well and put them into an ovenproof dish with the onion cut into wedges and the Brussels sprouts (thawed).
Season with salt, black pepper, paprika, white wine and a generous drizzle of olive oil, mix everything together and bake in the oven at 180 °C for about 40 minutes.
Meanwhile, put the port wine, balsamic vinegar, honey, star anise and cinnamon stick into a pot.
When it starts to boil, set to a low-medium heat and cook for about 15 minutes, stirring occasionally, until it becomes syrupy.
Add the butter and sultanas, stir and cook for about 5 minutes more.
Your codfish loins with sultanas are ready to serve with the roasted vegetables.
