Codfish Pizza

Ingredients
1 large onion
1 clove of garlic
q.s. piri-piri
1 bay leaf
1 tablespoon of olive oil
1 coffee spoon of turmeric powder
55ml warm water
1/2 teaspoon dehydrated yeast
100g oat flour
q.s. Cherry tomato
q.s. black olive
q.s. fresh parsley
Preparation
To prepare a delicious Codfish Pizza, first defrost the codfish.
To prepare the dough mix a teaspoon of the oat flour with the yeast and some of the warm water. Let it rest for 5 minutes.
Mix the remaining flour with the yeast mixture. Add the remaining lukewarm water.
Knead (adjusting if necessary with more lukewarm water or oat flour – the dough should become pliable). Let rise for about 1 hour (or until doubled in volume).
Set the oven at 200 degrees. Meanwhile, steam-cook the codfish, remove the skin and bones and flake it.
In a wok, add the olive oil, bay leaf, chopped garlic, chilli to taste, turmeric and finely sliced onion. Cook over a low heat.
Roll out the pastry with a rolling pin, arrange the onion and the flaked codfish on top. Place in the oven until the dough is cooked (about 15 minutes).
Serve the Codfish Pizza with olives, mini tomatoes and chopped parsley.
