Codfish Puff Pastry

Ingredients

300 g deep-frozen shredded codfish Riberalves
400 g puff pastry
250 g of mushrooms
2 cups of cooked rice
salt
2 eggs (separate the white from the yolk)
3 boiled eggs
1 cup sliced black olives

Preparation

Defrost the shredded codfish. Mix the rice with the egg yolk. Season with salt. Cut the mushrooms and the three hard-boiled eggs into very thin strips. Roll out the puff pastry about 3 mm thick. Place a layer of rice, the mushrooms and the hard-boiled eggs on it.

Spread a layer of codfish on top of the eggs, another layer of eggs, mushrooms, rice and finally the olives. Close the dough into the shape of a pillow and glue the edges with egg white. Place the roll on a baking tray and brush with egg yolk. Place in the oven with the pastry opening facing downwards. Bake the puff pastry on the bottom of the oven and leave to rest for 10 minutes before slicing.
