Codfish Rice
Ingredients
Olive oil q.s.
2 onions
1 clove of garlic
1 bay leaf
1 big ripe tomato
2c. of tomato pulp soup
Salt q.s.
Black pepper q.s.
1 dl of white wine
Parsley q.s.
2 cups. of carolino rice
Preparation
To prepare a delicious codfish rice recipe, start by defrosting the codfish stew.
Rinse under cold running water, drain well and set aside.
Soften the chopped onion and garlic with the bay leaf in olive oil. Then add the finely chopped tomatoes (peeled) and tomato pulp, season lightly with salt and freshly ground black pepper, stir, and cook for 4 to 5 minutes.
Then add the white wine and boil for 1 to 2 minutes to evaporate the alcohol.
Add to the onion and tomato sauce 3 cups of hot water, bring to the boil, and add the rice.
Stir and reduce to low to medium heat to cook slowly. Let it cook for 5 to 6 minutes and add to the rice the pieces of codfish stew.
Stir everything together and cook for another 10-12 minutes or so (adding a little more of hot water if necessary).
Check the salt and black pepper seasoning, sprinkle with chopped parsley and serve immediately.
