Codfish Risotto

2 slices of deep-frozen soaked Riberalves codfish
300 g of rice for risotto
1 onion
1 bay leaf
1 morrone pepper
1 glass of white wine
Salt and pepper
Chopped parsley

Boil 1 litre of water with the bay leaf and cook the codfish for about 5 minutes, strain it, flake it and set the water aside, keeping it on a gentle boil.

Chop the onion and sauté it with 2 spoons of butter, add the rice and fry for a few seconds over high heat. Pour in the wine, lower the heat, stirring constantly and when the rice has absorbed the wine, gradually add the codfish water, stirring occasionally.

After 10 minutes, add the flaked codfish and continue to add water as the rice absorbs it. When it is almost ready, add the pepper strips and some chopped parsley. Adjust the salt and pepper.
