Codfish, mango and toasted almond salad, by Mariana Abecasis

Ingredients

Lettuce
Arugula
½ Riberalves cod fillet cooked
¼ sleeve
cherry tomato
1 chopped boiled egg
2 Tablespoons toasted flaked almonds

Vinaigrette and Honey Sauce:
Olive oil
balsamic vinegar
Honey

Preparation

Boil the codfish for about 7 minutes in boiling water. When cooked, shred and leave to cool.

Place the lettuce and rocket on a deep plate. Add the flaked codfish, the halved cherry tomatoes, and the chopped hard-boiled egg.

Add the topping of toasted sliced almonds.

Season the codfish salad with a vinaigrette sauce and honey.
