Codfish Sauerkraut

Ingredients

600 g deep-frozen soaked cod loins Riberalves
1 small savoy cabbage
4 cloves of garlic
4 dl of olive oil
2 tablespoons of vinegar
2 chilli peppers
2 bay leaves
1 vegetable bouillon cube
Salt and pepper q.b.

Defrost the codfish loins, dry them with a kitchen cloth and place them on a tray. Season with pepper, add two peeled and crushed garlic cloves, the chillies, bay leaves and olive oil and then bake in a preheated oven at 160ºC for 30 minutes, turning the codfish halfway through. Remove from the oven and reserve the codfish and 0.5 dl of the olive oil from the tray.

Clean and wash the savoy cabbage, discarding the toughest part and cut into fine julienne strips. Peel and wash the remaining garlic cloves and chop them. Heat the 0.5 dl of olive oil you set aside in a pan, add the garlic and fry, stirring constantly until golden brown.

Then add the cabbage and let it sauté well. Drizzle with 2 dl water, add the vegetable stock, season with salt and pepper and cook until the cabbage is tender. Drizzle with the vinegar, stir, bring to the boil, remove from the heat and place on a serving dish or large plate. Arrange the codfish loins on top and serve decorated to taste. You can sprinkle with peppercorns.

Expert suggestion:

Sieve the oil from roasting the codfish through a colander and save it for use in other recipes.
