Fried Codfish Snacks

Ingredients

800 g deep-frozen soaked cod loins Riberalves
200 g of flour
4 eggs
3 tablespoons of olive oil
1 teaspoon of baking powder
1 dl of cold water
1 pinch of fine salt
oil for frying

Let the codfish loins defrost at room temperature, then rinse them in water, dry them, cut them into cubes and remove the bones.

Pour the flour into a bowl, add the yeast and the pinch of fine salt and mix. Add the egg yolks and olive oil, stir and then add the cold water, stirring constantly until it becomes a smooth paste. Separately, beat the egg whites until stiff, add them to the bowl, mix delicately and leave to rest for 20 minutes.

Heat a frying pan with olive oil, add the codfish cubes and fry them lightly on both sides. Remove them, let them drain and cool, then coat them with the previous mixture and fry them in oil until golden brown. Remove them, let them drain and serve them decorated to taste. Fried codfish snacks!
