Codfish Stew

Ingredients

800 g deep-frozen soaked cod fish stew Riberalves
1.5 kg of potatoes
4 very ripe tomatoes
1 red pepper
3 onions
4 cloves of garlic
2 dl of white wine
1.5 dl of olive oil
2 bay leaves
parsley q.b.
Salt and pepper q.b.

Preparation

How about a codfish stew for dinner? A practical and delicious recipe. Riberalves Codfish, Ready to taste good!

Let the codfish defrost, then rinse it in cold water and let it drain.

Peel the potatoes, onions and garlic cloves, cut the potatoes into slices, the onions into half-moons or slices and chop the garlic. Wash the pepper, cut it in half, remove the seeds and white skin and cut into strips. Wash the tomatoes and cut them into half-moons.

In a deep pan, arrange layers of onion, tomato, bay leaves, potatoes and pepper, add the codfish, garlic, more onion, pepper, tomato and potatoes and cover with the rest of the onion, garlic, tomato and pepper. Add a bunch of parsley and season with salt and pepper.

Add the white wine and olive oil, cover, bring to the boil, reduce the heat and simmer for 40 minutes. Remove from the heat and serve garnished with chopped parsley.
