Codfish stew with crispy Parma ham

Ingredients
Olive oil
3 tbsp. tomato puree
1 large onion, chopped
6 garlic cloves, slivered
400 g potatoes, peeled and cut into 0.5 cm slices
1 red pepper, cut into thin strips
2 tomatoes, diced
Sea salt to taste
2 bay leaves
100 ml white wine
200 ml water
Hot chilli sauce to taste (optional)
Black pepper to taste
Finely chopped parsley to taste
200 g Parma ham, sliced

Add the olive oil and tomato puree to a large pan. Add the onion, garlic and potatoes and season with salt and pepper. Add the pepper and tomatoes and season again with salt and pepper.
Add the fish and check the seasoning.
Add the bay leaf and drizzle with olive oil, white wine, water and a few drops of hot sauce (optional).
Cover the pan and cook on low heat for 30-40 minutes, without stirring. Shake the pan every now and then.
In the meantime, lay the Parma ham slices on baking paper and bake at 180°C for 20 minutes. Allow the Parma ham to cool down, cut it into pieces and mix with the parsley.
Remove the codfish stew from the heat, sprinkle with the chopped parsley mix and serve.
