2 garlic cloves
400 g of tomato
250 g of onion
400 g of potato
250g of red and green peppers
100 ml of oil
2 bay leaf
Salt and black pepper q.s.
100 ml of white wine
Defrost the codfish stew, rinse under cold running water, drain and set aside.
Chop the garlic and tomato (peeled) and slice the onion, potatoes and peppers (without seeds or veins).
Start by pouring 50ml of olive oil into the bottom of the pan, then add half the onion, garlic, peppers, potatoes and tomatoes, 1 bay leaf and season with salt. Then, arrange the pieces of codfish stew and add the remaining onion, garlic, peppers, potatoes, tomato and 1 bay leaf.
Add 3 stalks of parsley, season with salt and freshly ground black pepper and drizzle with the white wine and the remaining 50ml of olive oil.
Finally, cover and cook over a low heat for approximately 30 minutes (stirring the pan occasionally so as not to stick).
Serve with chopped parsley.
