Codfish stuffed cornbread with coriander

Ingredients
1 cornbread
Olive oil
2 garlic cloves
1 large onion
Coriander to taste
Salt and black pepper to taste
Collard greens
Preparation
How about preparing a delicious Codfish stuffed cornbread? Start by cooking the codfish:
- Place the frozen codfish in a pan and cover with water.
- Bring to the boil and then cook for 10 minutes. It’s ready!
*For a 250 g steak
Cut off the top and scoop out the inside of the cornbread, leaving about 1 cm on all sides.
Cut the onion into half-moon shapes. Gently fry the onion and a slivered garlic clove in olive oil until tender. Add the codfish and cook for 2-3 minutes.
Crumble the cornbread and mix with the chopped coriander. Season with a pinch of salt and black pepper, drizzle with olive oil and cook for a further 1-2 minutes to release the flavours.
Spoon the mixture into the cornbread, place the “lid” on top, drizzle with a little olive oil and bake at 180°C in a pre-heated oven for 10 minutes.
Serve the codfish in cornbread with collard greens lightly fried in olive oil with a chopped garlic clove.
