To prepare the Mexican sour cream: whisk the cream and cheese together with the juice of half a lime and a pinch of fleur de sel until creamy.
Cut the lettuce into thin strips, wash and drain the sweetcorn and finely dice the tomato and avocado.
Place a portion of the mixture into each taco, add the sauce and top with fresh coriander.
