Codfish Tartare

Ingredients

250g deep-frozen soaked codfish Riberalves
1 chopped onion
1 cup chopped chives
2 tablespoons chopped canned capers
2 tablespoons of olive oil + 1 cup of olive oil
Juice of a large lemon
Salt and pepper
8 slices of bread
1 teaspoon «crème fraîche»

Allow the codfish to defrost and cut it into small cubes. Add the chopped onion, half of the chives, capers and 2 tbsp. olive oil. Stir to mix all ingredients. Place the mixture in the fridge to rest. Before removing the tartare from the fridge, stir in the lemon juice and season with salt and pepper.

Cut the bread into circles using a glass, brush with olive oil and gently fry until golden. Spread the tartare onto the bread, top each slice with a teaspoon of sour cream and decorate with chopped chives. Your codfish tartare is ready!
