Codfish tortilla

800 g de postas de bacalhau tradicional demolhado ultracongelado Riberalves
1/2 chouriço
1,2 kg de batatas
1 pimento verde
2 cebolas
2 dentes de alho
8 ovos
2 dl de natas
0,5 dl de azeite
1 folha de louro
Salsa q.b.
Sal e pimenta q.b.
Óleo para fritar


Are we going to prepare a delicious codfish tortilla?

Wash the potatoes, cut them in half, boil them with the skin on in water seasoned with salt, drain them, and let them warm up. Remove the skin, let them cool, cut them into pieces and fry them quickly in oil.

Boil the cod fillets in water with the bay leaf, drain them, let them warm, remove the skins and bones and cut them into pieces. Peel and wash the onions and garlic cloves, cut the onions into half-moons, and chop the garlic. Wash the pepper, cut it in half, remove the seeds and white skin and then cut it into strips. Remove the skin from the chorizo and cut it into small cubes.

Heat the olive oil in a frying pan, add the onion, the garlic, the pepper and the chorizo and fry until soft. Add the cod and the potatoes, mix well, and adjust the seasoning. Beat the eggs with the cream, pour over the pan and bake in a preheated oven at 180 ºC for about 35 minutes. Remove the Codfish tortilla from the oven and serve decorated with chopped parsley.
