Codfish with aubergine

Ingredients
2 eggplants
4 ripe tomatoes
3 onions
3 cloves of garlic
1 spoon of chopped parsley
3 eggs
150 g of breadcrumbs
Olive oil
Frying oil

A simple and healthy recipe with Riberalves: Codfish with aubergine. Shall we try it?
Cut the aubergines into ½ cm slices, sprinkle them with coarse salt and leave them in a colander to lose the bitter liquid for at least 20 minutes. Meanwhile, boil the codfish remove the skin and bones and shred it.
Sauté two chopped onions and garlic with two tablespoons of olive oil, add the codfish and cook over a low heat. Sauté another onion with the third chopped onion, add the peeled and crushed tomatoes, salt, pepper and chopped parsley.
Wash and dry the aubergine slices, coat them with beaten eggs, then with breadcrumbs and fry them in hot oil until golden brown. Place the tomato sauce on the bottom of the plate and layer the aubergines and codfish.
