The leaves of two large sprigs of fresh basil

Start by boiling all the vegetables together with the fish heads and/or bones in a litre of water. Without rushing, allow the cooking to reduce the amount of liquid to much less than half. Meanwhile, season the codfish loins, wrap them in basil leaves and steam them.
Beat the egg yolks and, in a bain-marie, incorporate the butter, stirring constantly until it thickens. Add the stock concentrate to this mixture. Adjust the salt, with which you will cover the codfish loins.
For total pleasure, I suggest serving the Codfish with Basil with celery puree (half boiled potato, half boiled celery, passed through a food mill, flavoured with a spoonful of butter, one or two spoonful’s of cream or crème fraîche, salt, pepper and a generous pinch of nutmeg).
