Codfish with Bread

Ingredients
1 large baguette bread
1 large onion
3 cloves of garlic
4 eggs
250 g of mayonnaise
60 g of corn flour
6 dl of milk
0.5 dl of olive oil
Coriander q.s.
Nutmeg q.s.
Salt and pepper q.b.
milk to pass

Defrost the shredded codfish, cook it in milk and then shred or slightly crush it. Set the milk aside.
Peel and wash the garlic cloves and onion, cut the onion into half-moons and chop the garlic. Heat the olive oil in a pan, add the onion and garlic cloves and fry until golden brown. Add the cornflour, stirring constantly, then add the reserved cooking milk and stir constantly until it starts to thicken. Adjust the seasoning, remove from the heat, add the codfish stir and set aside.
Beat the eggs in a bowl. Cut the baguette bread into slices, dip half into the milk and then into the beaten eggs and arrange them on the bottom of a baking tray or Pyrex dish, without overlapping them. Spread the codfish mixture on top and cover with the remaining slices of bread coated in milk and beaten eggs.
Spread well with the mayonnaise and then bake in a preheated oven at 180 ºC until golden brown. Remove from the oven and serve sprinkled with chopped coriander.
