Braised codfish with chocolate

1 slice of bread
Olive oil
1 red pepper
1 red onion
1 glass white wine
1 cod loin
1 bay leaf
Vinegar Wine
1 bar chocolate 70% cocoa


Braised Codfish with chocolate: Original, innovative, and tasty! Shall we prepare?

Start the preparation by flavouring a thinly sliced slice of bread in a frying pan with garlic and rosemary, until lightly toasted.

In another frying pan, place purple onion, and red pepper, finely chopped, with a drizzle of olive oil. Simmer over low heat for about 20 min, and refresh with a little white wine at the end, letting the alcohol evaporate.

Place everything in a blender and leave until it becomes a smooth, consistent mixture.

In a pan heat water with a little olive oil, a clove of garlic and a bay leaf.

When it boils add one loin of Riberalves codfish and reduce to low heat. Cook for about 8 minutes and remove from the heat.

In another bowl place a little vinegar, a spoonful of honey and half a bar of 70% cocoa dark chocolate. Simmer over a low heat and stir very slowly until it becomes consistent and homogenous.

To serve, place a slice of bread on the base, spread with the onion and pepper paste, 3 or 4 slices of cooked codfish, add the chocolate vinaigrette on top and finish with a sliced mint leaf!
