Codfish with cornbread
For tonight’s dinner we are going to prepare some delicious codfish with cornbread! A tasty recipe made with the best Portuguese Cured Codfish!
Ingredients
Olive oil to taste
2 cloves garlic, sliced
½ a loaf of cornbread
2 onions, sliced
Pepper to taste
Chopped parsley to taste
8 roasting potatoes
Preparation
For tonight’s dinner we are going to prepare some delicious codfish with cornbread! A tasty recipe made with the best Portuguese Cured Codfish!
Boil the potatoes for about 15 minutes.
Boil the codfish for 15 minutes.
Put a good layer of sliced onions and garlic into an ovenproof dish.
Drizzle generously with olive oil.
Place the codfish pieces on top of the layer of onion and garlic.
Drizzle with a little more olive oil.
Bake in the oven for 15 to 20 minutes.
Grind the cornbread in a food processor and drizzle with some olive oil from the codfish dish. Add the finely chopped parsley.
Stir the mixture together to create a paste. Reserve.
Remove the potatoes from the heat and give each one a little punch.
Place the cornbread mixture on top of the codfish and press down.
Put the dish back in the oven for a few more minutes to bring out the flavours and toast the cornbread.
