Ingredients

2 Riberalves traditional codfish steaks
Olive oil
1 bay leaf
4 medium potatoes
Table salt to taste
4 eggs
2 red peppers (optional)
Parsley to taste

Preparation

Codfish with fried eggs! A famous recipe with a special Riberalves twist! Take a peek!

Allow the codfish steaks to defrost, dry using kitchen paper and lightly fry in olive oil with the bay leaf for 3-5 minutes on each side. Remove the skin and bones and flake.

Peel and cut the potatoes into strips. Fry in a little olive oil until golden. Stir in the codfish flakes and season with a pinch of salt.

Fry the eggs in olive oil and season with a pinch of salt.

Lay the fried potatoes and codfish flakes on the serving plates and top with the fried eggs and peppers, cut into thin strips. Sprinkle with chopped parsley and serve immediately.
