120 g Riberalves codfish steak
1 dessert spoon olive oil
1 garlic clove, slivered
1/3 onion, sliced
1 cup cherry tomatoes
200 g pumpkin
100 g cauliflower

Allow the codfish to defrost and set the oven to 180°C.
Place the onion, garlic, codfish and cherry tomatoes on a baking tray. Drizzle with olive oil and sprinkle with thyme.
Bake for 30 minutes (or until cooked to taste).
In the meantime, boil the pumpkin and cauliflower in a pan with a little water. Once cooked, mash the cauliflower using a handheld blender and season with nutmeg.
