Codfish and sweet potato creamy soup

Ingredients
500 g of sweet potato
1 onion
4 tomatoes
2 cups of cream
5 tablespoons of butter
4 cups of beef broth
2 tablespoons of coriander
1 tablespoon of flour

Preparation
To prepare a delicious Codfish with sweet potato, peel the sweet potato, cook in salted water, drain, cut into cubes and set aside.
Boil the codfish and shred it with a fork.
Dissolve a tablespoon of flour into a tablespoon of butter, add the two cups of cream and when creamy, add the shredded codfish. Stir well until it becomes a paste, season with salt and nutmeg, and refrigerate until well chilled.
Heat the remaining butter and sauté the chopped onion until softened. Add the cleaned, peeled tomatoes and sauté. Add the sweet potato, the cups of stock, and reduce to cream in a blender.
Put it back on the heat and let the cream simmer. If you want it more liquid, add water. Adjust the seasoning.
Serve hot on a warm plate and place a scoop of the cold codfish cream in the middle. Sprinkle the centre with chopped coriander and serve immediately.
