Ingredients
4 tomatoes
1 onion
2 garlic cloves
1 bay leaf
Basil q.b.
1/3 red pepper
1 Tablespoon of olive oil
Cucumber q.s.
Tomato mini q.b.
walnut kernel q.b.
Preparation

In a pan, add the olive oil, the onion, the chopped pepper and garlic and the bay leaf.
Heat over a low heat and as soon as the onion becomes translucent add the 4 chopped tomatoes. Let it cook (about 20 minutes, or until it is to your liking), adding water little by little, as necessary. When it is almost ready add the basil to taste.
Once cooled, remove the bay leaf and blend with a hand blender (if you want a thinner sauce, you can strain it).
Set the oven to 180 degrees. Pour the tomato sauce into a tray, place the codfish loin on top and place in the oven, where it will cook for about 30 minutes.
Serve the Codfish with Tomatoes hot with a chopped cucumber, mini tomato, walnut, and basil.
